CHS New York Tech Panel

On Monday, May 13 CHS New York held the 2019 Future of Hotel Technology Panel at Voyager HQ, the global club for travel & hospitality innovators. Three panelists gave their perspectives on cutting edge trends in hotel technology, spoke to exciting new developments / acquisitions, and provided guidance on where hoteliers can make immediate improvements to their current tech stack or operating environment.

The event was hosted and moderated by Hotel Tech Entrepreneur James Nannos ’11. Panelists included Alissa Hendel ‘07 (ALICE – former CHS president), Tom Botts (Uplift – CCO), and Steffan Berelowitz (Travel Tripper – VP Digital).

Guests enjoyed complimentary beer & wine, networked with industry executives, and learned where technology is heading for hotels in 2019 and beyond. The event was also recorded and will be aired on the https://travelisyourbusiness.com/ podcast.

CHS Georgia – Reception and Dinner at Coalition Food and Beverage

On Wednesday, May 22, 2019, the CHS Georgia Chapter gathered at Coalition Food and Beverage for a reception and dinner. Our host for the evening was Ryan Pernice ’07, founder and owner of R.O. Hospitality. Coalition is Ryan’s third restaurant in the Atlanta area.

CHS DC/Baltimore – 2019 Annual Hospitality Forum

The Cornell Hotel Society (CHS), Washington, DC/Baltimore Chapter held it’s 10th Annual Hospitality Forum on May 7th, 2019 at The Madison Hotel Washington DC.

As a part of the Faculty Road Show Program, CHS brought SHA lecturer, Christopher Gaulke, to Washington DC to host the panel on Trends in Food & Beverage (F&B). Christopher teaches courses in restaurant management, purchasing and supply chain management, and new product development.

The panel brought together a vibrant mix of F&B industry experts ranging from kitchen designer to award winning restaurateur.

Hollis Silverman ’00, Principal at Woodward Wells Hospitality. As a consultant, she partners with chefs and restaurateurs to clarify their strategic vision, streamline operations, and help them grow their businesses.

Jordan Schlotterbeck ‘14, Director of F&B Development for the Americas at Hilton. He oversees the F&B programs of over 100 hotels in 15 countries. Jordan holds degrees from both the Cornell Hotel School and the Culinary Institute of America.

Katherine Kies ’11, Corporate Director of F&B for PM Hotel Group. At PM Hotel Group, Katherine is responsible for the F&B operations at 25 full service hotels and $100M of annual F&B revenue

Scott Levine, SVP and Founder of the Design Difference. Scott has more than 20 years of experience in kitchen design and as a formally trained chef with experience in restaurant and hotel operations, he fully understands the inner workings of commercial kitchens and laundry facilities and the importance of strategic planning and design.

The panel discussions focused around current trends impacting the F&B industry including sustainable sourcing, use of technology to improve efficiency, mobile ordering and delivery, and labor challenges. The panelists also talked about trends in hotel F&B operations and bringing more innovative restaurant concepts to hotels.

CHS South Florida – Third Annual CHRIS/HOLA Reception

On Tuesday, May 21, 2019 alumni and industry partners met at the Royal Palm Miami for a networking evening hosted by the CHS South Florida Chapter. The third annual event, held during the CHRIS/HOLA conferences, was attended by about 40 people. We had the generous sponsorship of Brown and Brown Insurance, CBRE, HEI Hotels & Resorts, HFF and Trust Hospitality. Our chapter raised approximately $800 to put towards our South Florida student scholarship.

2019 EMEA Annual Meeting – Cannes

The 2019 Annual CHS EMEA Regional Meeting was held in Cannes, France during early May. Hotelies explored the local areas, such as Grasse, Monte Carlo, and St. Honorat Island, and sampled foods and wines from the local region of Côtes d’Azur. The weekend also had some fantastic talks about leading and retaining talent with the new generation of hoteliers, led by SHA Professor Cathy Enz. And time was spent doing what Hotelies do best: networking! Many thanks to the speakers: Mr. …Jeffrey Scott ’91, Mr. Michel Chevillon, Professor Cathy Enz, and Dr. Demian Hodari ’96 for their wonderful contributions, and to Dean Kate Walsh for traveling to France to share in the experience. On April 1, 2019, the CHS Australia/New Zealand chapter hosted a reception for the Cornell Real Estate Club. The event was held at the Opera Bar on the lower Concourse of the Sydney Opera House.

CHS Rocky Mountain Samples Alumni Beers

The CHS Rocky Mountain Chapter hosted a beer tasting with SHA Lecturer, Doug Miller, on Sunday, April 7, 2019. The theme of the event was Cornellians in the Beer Industry, representing beers from breweries managed or owned by a Cornellian. The beers were graciously donated by Ithaca Beer, Mill House Brewing Company, Monday Night Brewing, Funkwerks, and Roadhouse Brewing Company. It was a great opportunity to sample new beers and learn more about flavors, styles, and production!

CHS Germany Visits Two New Hotels In Berlin

In early April 2019, CHS Germany toured and dined at two of Berlin’s newest hotels: The Hotel Indigo Berlin – East Side Gallery and the Hampton by Hilton Berlin City East Side Gallery.  The evening started with a wonderful view over Berlin and a cocktail.  We were welcomed by the GM Melanie Fuchs and the Cluster Sales Manager Eric Matylewicz.  We had a very interesting tour through the two properties, including an explanation of the new area of east side gallery in Friedrichshain. Very impressive.

Afterword’s we had dinner at the chefs table at the Restaurant serving food from Chef Lena König who brings high-quality German tapas from the region to the spoon.  It was a very nice atmosphere and we had good opportunity to talk and network.  Thank you to the Team and GM of the Hotel Indigo Berlin – East Side Gallery for this very nice evening.
